Commercial kitchens are very busy places, sometimes operating round the clock and frequently staffed with people who are not trained in fire fighting. Cooking may be inadvertently left unattended and high temperature deep fat fryers may flare up in seconds. Ultra’s Water Mist System For The Catering Industry

This fully-fitted system is an invaluable and comprehensive answer to kitchen fire hazards. Based on proven technologies.

For instance, when dealing with a fire in a fat fryer, conventional water droplets will sink into the oil pan, expanding the oil so that it erupts and ignites. By contrast, water mist consists of very small droplets between 10 and 200 microns in diameter that can quickly suffocate the fire at source.

With a water mist system following fire fighting process takes place in seconds:

  • Water mist droplets rapidly vaporise in the flames and expand into steam (1 litre of water mist produces 1760 litres of steam)
  • Overheated surfaces are cooled and the mist remains on the surface of the oil to smother the fire
  • Water mist blocks radiated heat, preventing the spread of fire

The system is not only highly effective but economical and efficient for cleanup operations, using 90% less water than conventional sprinkler systems. This helps the kitchen staff to resume normal operations with as little delay as possible.

  

Ansul Systems – Safeguarding Kitchens Around The World

Ansul have set the standard for kitchen fire suppression, detecting and suppressing fires throughout the industry. A unique low pH liquid fire suppressant is used which is equipment friendly and cleans up fast. Simple and design, means that the system blends into any kitchen facility. Ansul systems are offered in two basic designs; appliance-specific, in which nozzles are aimed a specific hazard areas of each appliance; and overlapping, where nozzles are arranged to overlap and provide a “fire-free zone” throughout a group of appliances. The system works with the following method:

  • When a fire occurs in a protected area, it is quickly sensed by the detectors located within the ductwork or cooking appliance hood.
  • The detectors trigger the Ansul Automan releasing mechanism which actuates the system, pressuring the agent storage tank and automatically shutting off the appliance energy sources in the event of a fire.
  • Ansulex low pH liquid fire suppressant flows through the piping and is discharged into the plenum, duct areas and onto the cooking appliances.
  • The Ansulex agent is applied directly onto the fire in specific spray patterns, suppressing the fire in seconds. As it smothers the hot cooking greases, a foam blanket is formed, temporarily sealing off combustible vapours to help prevent fire reflash.
